What are the nutritional differences between Buffalo and Beef?
Buffalo is a much healthier. While Buffalo carries the benefit of 21% more iron and 5% more protein than beef, it also has half the calories and 8X less fat! The tastes are similar, with Bison having a slightly sweeter flavor. Elk, Kangaroo, Ostrich, Venison and Antelope are a few more red meats with nutritional properties similar to Buffalo; each with slightly different flavors. Experimenting with these different red meats can really add variety to a boring diet.
