Pacific Oysters Sold Fresh in Astoria Oregon

We always have fresh local Oysters in our Seafood Market. We carry Petite, Small, Medium, Large and sometimes Jumbo and prices are $9.00 per dozen and 95 cents each for Jumbos. Generally the smaller the oyster the better they taste raw. Larger oysters are "More bang for the Buck" and we encourage our customers to cook them on the BBQ. Petite Oysters are a little under 1-year old. Jumbo Oysters are closer to 5. We have 2 main live oyster suppliers, one in Willapa Bay that delivers on Tuesday, and one in Netarts Bay that delivers on Friday or Saturday. We also have fresh shucked oysters at $9.95 per lb, smoked at $32.00lb and oyster shucking knives for $4.99. Oysters shooters are also available at $1.50 and include cocktail sauce and lemon slice. How long do oysters live out of the water?

 

Oysters can live under refrigeration for 2 to 3 weeks. They live longer in the winter months and shorter in the summer. When they stay stuck open while submerged in cold water they are dead and unsafe to eat. It's not uncommon to see 1 or 2 dead oysters in a bushel. We try to remove dead oysters before we sell them, but some will slip through. Don't hesitate to return Oysters if you aren't 100% satisfied.

 

How many oysters are in a Bushel?

 

There are many different answers to this question. We follow most others in the PNW and have 60 oysters per bushel. Other places around the world will be different. Prices are $35 to $42 depending on the market and size.

 

Why are oysters shaped different?

 

The oyster bed itself will dictate the shape. Oysters with rounder shells have more room to grow. Skinnier oysters are raised close together.

 

How stable are Oyster Prices?

 

Prices will probably go up over the next few years. Growers are having problems with the higher acidity levels of the ocean. The survival rate of Oyster seeds diminishes quickly when acid levels are higher. Growers are adapting by constantly testing water conditions and only planting seeds when the ocean conditions are right. This may create some gaps in supply, especially for the petites.
